Bramley apples are the backbone of a proper orchard tradition — their thick green skin giving way to a soft, ivory flesh that collapses into a gloriously fluffy, sharp-sweet purée when cooked. Spoon into a buttery crumble with a thick crust of oats and brown sugar, layer into a classic tarte tatin, or simply stew with a cinnamon stick and a splash of water for the most comforting sauce imaginable.
